Gordon Ramsay’s Michelin-starred Maze has become even trendier by adding a sushi bar to its French/Asian restaurant and US-style grill. You can arrive and graze at the counter or sample various products as part of a complete meal in one of the dining rooms. With a Japanese sushi chef on board, the menu has well-crafted morsels including kani snow crab combined with mixed seaweeds, dashi and pickled wasabi or hamachi tataki (thinly sliced yellowtail with chive, sesame and grated radish served with ‘yuzu kosho’ dressing and white seaweed).
Mixed platters are also available, along with various nigiri – including lightly flamed versions served at different temperatures. Be warned that the short menu will be easily exhausted if you have any sort of appetite – so best use the place for quick lunchtime nibbles. To drink, saké is the natural accompaniment.
